**** Deli cooler did not have a internal thermometer. PIC that this cooler is rarely used for cold-holding for more than 4 hours, but a thermometer should still be provided by next routine inspection. - 4-204.112 (A): (A) In a mechanically refrigerated or hot FOOD storage unit, the sensor of a TEMPERATURE MEASURING DEVICE shall be located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot FOOD storage unit. - V |
Inspection Comments |
-The ceiling tiles in the back storage area still need repaired, there is currently no food storage occurring in this area. -When inspector visited, they had a just received a shipment and some newly received items were temporarily on the floor. PIC will move and did move some items while inspector was present to 6" above the ground. Ensure that food is stored 6" above the ground. |
